1. Yang Sheng Nutritional Cooking - 4th Quarter

This is the fourth in a four quarter series on Yang Sheng cooking. Recipes are appropriate for the season and are an excellent illustration of Yang Sheng (Nourishing Life). Unlike other Yang Sheng courses, students can sign up for the entire quarter or for individual classes.

Yang Sheng is the art of nourishing Life. It is the foundation of health in Chinese medicine and the basis of Taoist cultivation. Yang Sheng includes qigong, diet, sleep, meditation, and living in accord with the cycles of nature.

This program presents an integrated course of study in the methods of Yang Sheng nourishing life with an emphasis on the use of diet.

Course material, drawn from Classical Chinese Medicine and Taoist traditions, is designed to aid students’ cultivation of their abilities to observe the patterns of the natural world and function from this "view".

Using a hands-on approach students learn cooking methods, wildcrafting, the preparation of herbal substances and their use in cooking, energetic anatomy, the cosmology of CCM, and more.

The program presents traditional Chinese dishes and also examines western style menus from the view of Taoist and CCM Nutrition principles.

The Curriculum Includes:

  • Chinese Nutrition: materia medica of foods
  • Culinary Alchemy: the nature of traditional cooking methods
  • Qi gong & Meditation
  • Use of Chinese Herbs in Cooking
  • Dietary Instruction for individual constitutional types
  • Classical Chinese Cosmology and Energetic Anatomy


The Goal of the Program
The goal of this program is for students to understand the use of Chinese Nutrition:

  • As part of one’s own cultivation practice
  • In applying these principles when cooking for others
  • In the constitutional assessment of individuals and in designing a dietary plan to benefit their health

Frequently Asked Questions

What is expected from students?
Each student is expected to maintain regular attendance of classes and workshops (including field trips), learn the material presented in classes, complete assigned projects, and keep a journal.

How is this different from a Chinese cooking class?
This is an integrated program in Yang Sheng - the art and science of nourishing life - so while cooking and nutrition are presented, they are done so within the greater context of Chinese medicine and Taoist cultivation.

Is this Chinese Medicine?
This program does not teach people to practice Chinese medicine; however, the material is an integral part of Chinese medical knowledge. The focus is on nourishing and supporting life, rather than on pathology. This unique program is the first of its kind in North America.

Are there prerequisites?
Students would benefit from having a basic knowledge of Qigong, Chinese medicine, or Taoism. However, this knowledge is not required for entry into program. Members of the staff will interview each person who applies to the program, so everyone will have an equal opportunity to demonstrate their interest and any experience they might have. Sincere interest and a willingness to learn a new way of perceiving are the most important qualifications.
